potassium

'assumption not new upset' is the wordplay.
'not' is a deletion indicator.
'new' becomes 'n'.
'upset' is an anagram indicator.
'assumption' with 'n' removed is 'assumptio'.
'assumptio' with letters rearranged gives 'POTASSIUM'.
