Crossword Genius

Bread extremely chewy in French city (5)

Ross

I believe the answer is:

nancy

'french city' is the definition.
(I've seen this before)

'bread extremely chewy' is the wordplay.
'bread' becomes 'nan' (variant spelling of naan).
'extremely' means to remove the middle letters.
'chewy' with its middle taken out is 'cy'.
'nan'+'cy'='NANCY'

'in' is the link.

(Other definitions for nancy that I've seen before include "Lorraine's part" , "in Oliver?" , "one of the Mitford sisters" , "Dickensian heroine" , "No Man" .)

I've seen this clue in The Independent.
