I believe the answer is:

oranges

'fruit salad of mangoes' is the definition.
'oranges' can be an answer for 'fruit' (I've seen this before). I am not sure about the 'salad of mangoes' bit.

'rambutans peeled and pitted' is the wordplay.
'rambutans' becomes 'rambotans' ('rambotan' can be a synonym of 'rambutan').
'peeled' means to look at the middle letters.
'and' means one lot of letters go next to another.
'pitted' becomes 'ranges' (I can't explain this - if you can you should believe this answer much more).
The middle of 'rambotans' is 'o'.
'o'+'ranges'='ORANGES'

'and' acts as a link.
