'composer' is the definition.
(choral composer Thomas Tallis)

'is subdued by remarkable english' is the wordplay.
I cannot really see how this works, but
'is' is within the answer.
'remarkable' could be 'tall' (I've seen this before) and 'tall' is present in the answer.
No letters remain.
This explanation may well be incorrect...

Can you help me to learn more?

(Other definitions for tallis that I've seen before include "Premier English composer at the court of Henry VIII" , "Thomas -, sixteenth century English composer" , "Thomas --, Elizabethan composer" , "Thomas ---, Tudor composer" , "Thomas --, C16 English composer" .)

I've seen this clue in The Telegraph.
