'and so on with head of history' is the wordplay.
'and so on' becomes 'etc' ('etc.' can be a synonym of 'and so on').
'with' says to put letters next to each other.
'head of' suggests taking the first letters.
The first letter of 'history' is 'h'.
'etc'+'h'='ETCH'

(Other definitions for etch that I've seen before include "Carve or engrave into surface" , "Cut into a block used for printing" , "Cut deeply (with acid?)" , "Make designs" , "Cut using sharp instrument" .)
