Ross

I believe the answer is:

chitterlings

I'm a little stuck... Click here to teach me more about this clue!

'guts' is the definition.
(I've seen this before)

'sticks around striker showing' is the wordplay.
'sticks' becomes 'clings' ('cling' can be a synonym of 'stick').
'around' indicates putting letters inside.
'striker showing' becomes 'hitter' (I can't explain this - if you can you should give a lot more credence to this answer).
'clings' enclosing 'hitter' is 'CHITTERLINGS'.

Can you help me to learn more?

(Other definitions for chitterlings that I've seen before include "The smaller intestines of a pig, cooked as food" , "guts" .)

I've seen this clue in The Times.
