'the spanish stay over' is the wordplay.
'the spanish' becomes 'el'.
'stay' becomes 'bide' (biding is a kind of staying).
'over' says the letters should be written backwards.
'el'+'bide'='elbide'
'elbide' backwards is 'EDIBLE'.

(Other definitions for edible that I've seen before include "hoping dinner will be this?" , "Good enough to eat" , "Palatable" , "suited to diners" , "Fit to eat" .)
