I believe the answer is:

adipose

I'm a little stuck... Click here to teach me more about this clue!

'what is fat' is the definition.
I can't tell whether this definition defines the answer.

'nowadays? i put as a question to' is the wordplay.
I cannot quite understand how this works, but
'nowadays?' could be 'ad' and 'ad' is located in the answer.
'i' is within the answer.
'put' could be 'pose' (posing is a kind of putting) and 'pose' is found within the answer.
This accounts for all the letters.
This explanation may well be incorrect...

(Other definitions for adipose that I've seen before include "Containing fat" , "Composed of animal fat" , "Fat-storing (tissue)" , "Relating to fatty tissue" , "Obese" .)

I've seen this clue in the Evening Standard.
