I believe the answer is:

port salut

'cheese' is the definition.
(I've seen this before)

'wine you heard is in season' is the wordplay.
I cannot really see how this works, but
'wine' could be 'port' (port is a kind of wine) and 'port' is found within the answer.
'you' could be 'u' (homophones) and 'u' is found in the answer.
'season' could be 'salt' (salt can mean to season with salt) and 'salt' is found within the leftover letters.
No letters remain.
This explanation may well be incorrect...
