I believe the answer is:

surfeit

I'm a little stuck... Click here to teach me more about this clue!

'gluttony' is the definition.
The answer and definition can be both acts as well as being singular nouns.
Perhaps you can see an association between them that I don't see?

'bound to hinder fellow having sex' is the wordplay.
I cannot really understand how this works, but
'fellow' could be 'f' (abbreviation - of a society etc.) and 'f' is located in the answer.
'bound' could be 'sure' (synonyms) and 'sure' is found within the leftover letters.
'sex' could be 'it' (common euphemism) and 'it' is located in the answer.
This accounts for all the letters.
This may be the basis of the clue (or it may be nonsense).

Can you help me to learn more?

(Other definitions for surfeit that I've seen before include "Overindulge" , "having had quite enough" , "Overindulgence" , "excessive amount" , "Excess, glut" .)

I've seen this clue in The Sunday Times and The Times.
