I believe the answer is:

minotaur

I'm a little stuck... Click here to teach me more about this clue!

'morris' is the definition.
Both the answer and definition are singular nouns.
Perhaps there's an association between them I don't understand?

'penning letter to greek character from crete' is the wordplay.
I cannot quite see how this works, but
'letter' could be 'tau' (tau is a kind of letter) and 'tau' is found within the answer.
'character' could be 'r' and 'r' is present in the answer.
'from' could be 'in' (I've seen this in other clues) and 'in' is located in the answer.
The remaining letters 'mo' is a valid word which might be clued in a way I don't see.
This may be the basis of the clue (or it may be nonsense).

'perhaps' is the link.

Can you help me to learn more?

(Other definitions for minotaur that I've seen before include "Mythical creature" , "Mythical man-bull" , "Cretan labyrinth resident" , "50 per cent ruminant" , "Labyrinth monster killed by Theseus" .)

I've seen this clue in The Independent.
