Although both the answer and definition are singular nouns, I can't understand how they can define each other.

'quietly take the most recently mentioned item' is the wordplay.
'quietly' becomes 'p' (p for piano and quiet).
'take' says to put letters next to each other.
'the most' means to remove the last letter.
'recently' becomes 'late' (of late).
'mentioned item' becomes 'ter' (I am not sure about this - if you are sure you should give a lot more credence to this answer).
'late' with its last letter taken away is 'lat'.
'p'+'lat'+'ter'='PLATTER'
