Crossword Genius

Cur often eviscerated meat (6)

Ross

I believe the answer is:

mutton

'meat' is the definition.
(I know that mutton is a type of meat)

'cur often eviscerated' is the wordplay.
'cur' becomes 'mutt' (synonyms).
'eviscerated' suggests removing the centre (the word is disembowelled of its inside letters).
'often' with its centre removed is 'on'.
'mutt'+'on'='MUTTON'

(Other definitions for mutton that I've seen before include "Sheep's flesh" , "Meat from sheep" , "Meat that may be dressed as lamb" , "Sheep as food" , "can be eaten" .)

I've seen this clue in the Sydney Morning Herald.
