The definition and answer can be both animals as well as being singular nouns.
Perhaps there's an association between them I don't understand?

'the queen belongs to me' is the wordplay.
'the queen' becomes 'ER' (Elizabeth Regina ie Queen Elizabeth).
'belongs' becomes 'ne' (I am not sure about this - if you are sure you should give a lot more credence to this answer).
'to' says to put letters next to each other (I've seen this in other clues).
'me' becomes 'mi' (both are spellings of the musical note).
'ne' after 'mi' is 'mine'.
'er'+'mine'='ERMINE'
