I believe the answer is:

landlocked

'like switzerland?' is the definition.
(I know that Switzerland is a landlocked country)

'flipping freezing in kendal surprisingly' is the wordplay.
'flipping' says the letters should be written backwards.
'freezing' becomes 'cold' (similar in meaning).
'in' is an insertion indicator.
'surprisingly' indicates anagramming the letters (a surprising ordering of the letters).
'cold' reversed gives 'dloc'.
'kendal' with letters rearranged gives 'lanked'.
'dloc' inserted into 'lanked' is 'LANDLOCKED'.

(Other definitions for landlocked that I've seen before include "like the Swiss?" , "Cut off from the sea" , "With no sea coast" .)
