I believe the answer is:

liberation

'freedom' is the definition.
(I know that Liberation is a liberation)

'drink drinking beer every now and then' is the wordplay.
'drink' becomes 'libation' (libation can humorously mean a drink).
'drinking' means one lot of letters goes inside another (inserted letters are consumed or drunk).
'every now and then' means one should take alternating letters (letters selected at regular intervals).
The alternate letters of 'beer' are 'er'.
'libation' enclosing 'er' is 'LIBERATION'.
