I believe the answer is:

indian

(I know that Indian is a type of restaurant)

'funding raised in hotel' is the wordplay.
'funding' becomes 'aid'.
'raised' is a reversal indicator (going up in a down clue).
'in' means one lot of letters goes inside another.
'hotel' becomes 'inn' (inn is a kind of hotel).
'aid' reversed gives 'dia'.
'dia' placed into 'inn' is 'INDIAN'.

(Other definitions for indian that I've seen before include "Delhi native perhaps" , "Nationality of Salman Rushdie" , "Club, summer or rope-trick" , "IDA inn provided for this nationality" , "This summer may happen in late autumn" .)
