Although both the answer and definition are singular nouns, I cannot understand how one could define the other.

'key dialect' is the wordplay.
'key' becomes 'esc' ('Escape' key on a computer keyboard).
'dialect' becomes 'argot' (I've seen this in another clue).
'esc'+'argot'='ESCARGOT'
