Leave university over a revolutionary painting technique (7)

Ross

I believe the answer is:

gouache

I'm a little stuck... Click here to teach me more about this clue!

'painting technique' is the definition.
(I've seen this before)

'leave university over a revolutionary' is the wordplay.
'leave' becomes 'go' (to go is to depart or leave).
'university over' becomes 'u' (I can't justify this - if you can you should believe this answer much more).
'revolutionary' becomes 'che' (Che Guevara the Marxist revolutionary).
'go'+'u'+'a'+'che'='GOUACHE'

Can you help me to learn more?

(Other definitions for gouache that I've seen before include "Picture" , "Opaque watercolour paint" , "Painting with colours mixed with gum" , "Watercolour mixed with gum" , "Paint medium" .)

I've seen this clue in The Telegraph.
