'almost' means to remove the last letter (almost the whole word is kept).
'too' becomes 'also' (synonyms).
'wonderful' becomes 'ace' (ace can informally mean very good).
'also' with its final letter taken away is 'als'.
'als'+'ace'='ALSACE'

(Other definitions for alsace that I've seen before include "Region in France, occasionally German" , "White wine region of northeast France" , "part of France" , "Laces a province in France" , "Region of northeastern France noted for its wines" .)
