'Gravlax' can be an answer for 'salmon' (Nordic salmon dish). I am unsure of the 'of' bit.

'not entirely dignified sloppy' is the wordplay.
'not entirely' means to remove the last letter (most but not all of the word).
'dignified' becomes 'grave' (I've seen this before).
'sloppy' becomes 'lax' (both can careless).
'grave' with its last letter removed is 'grav'.
'grav'+'lax'='GRAVLAX'
