I believe the answer is:

raccoon

I'm a little stuck... Click here to teach me more about this clue!

'one' is the definition.
Although both the answer and definition are singular nouns, I don't understand how they can define each other.

'sort of corona round crockett's head?' is the wordplay.
'sort of' is an anagram indicator.
'round' means one lot of letters goes inside another.
'head?' says to take the initial letters (I've seen 'heads of' mean this).
The initial letter of 'crocketts' is 'c'.
'corona' with letters rearranged gives 'racoon'.
'racoon' placed around 'c' is 'RACCOON'.

'forming' is the link.

I've seen this clue in The Globe and Mail.
