'choice' can be an answer for 'pick' (I've seen this in another clue). I'm not sure about the 'the centre' bit.

'a cold brown sweet?' is the wordplay.
'a cold brown' becomes 'cho' (I am not sure about this - if you are sure you should give a lot more credence to this answer).
'sweet?' becomes 'ice' (ice is a kind of sweet).
'cho'+'ice'='CHOICE'
