Although both the answer and definition are singular nouns, I don't see how one could define the other.

'plate served up with stout' is the wordplay.
'plate' becomes 'lamina' (I've seen this before).
'served up' says the letters should be written in reverse.
'with' says to put letters next to each other.
'stout' becomes 'fat' (similar in meaning).
'lamina' back-to-front is 'animal'.
'animal'+'fat'='ANIMAL FAT'
