Although both the answer and definition are plural nouns, I can't see how they can define each other.

'she does all sorts' is the wordplay.
'sorts' is an anagram indicator (I've seen 'sort of' mean this).
'she'+'does'+'all'='shedoesall'
'shedoesall' is an anagram of 'LEASEHOLDS'.
