flange

'dish' becomes 'flan' (I've seen this before).
'say' becomes 'eg' (both can mean 'for example').
'turned over' says the letters should be written in reverse.
'eg' back-to-front is 'ge'.
'flan'+'ge'='FLANGE'

'of' acts as a link.
