South American ways of handling cases packed with meat? (8)

Ross

I believe the answer is:

sausages

I'm a little stuck... Click here to teach me more about this clue!

'meat?' is the definition.
(I've seen this before)

'south american ways of handling cases' is the wordplay.
'south american' becomes 'SA'.
'ways of handling cases' becomes 'usages' (I can't justify this - if you can you should believe this answer much more).
'sa'+'usages'='SAUSAGES'

'packed with' acts as a link.
This may not be correct. Some or all of it may be part of another bit of the clue.

Can you help me to learn more?

(Other definitions for sausages that I've seen before include "eg Hot-dogs" , "Minced meat stuffed in casings" , "Minced seasoned meat stuffed in tubes" , "Bangers" , "They may be eaten" .)

I've seen this clue in The Telegraph.
