Stack of fruit in Irish county? (8)

Ross

I believe the answer is:

limerick

I'm a little stuck... Click here to teach me more about this clue!

'irish county?' is the definition.
(I've seen this before)

'stack of fruit' is the wordplay.
I cannot really see how this works, but
'stack' could be 'rick' (rick is a kind of stack) and 'rick' is located in the answer.
'fruit' could be 'lime' (lime is a kind of fruit) and 'lime' is found in the answer.
This accounts for all the letters.
This explanation may well be incorrect...

'in' acts as a link.

Can you help me to learn more?
