Although both the answer and definition are plural nouns, I can't understand how one could define the other.

'monday's soon building' is the wordplay.
'monday's' becomes 'mon's' (short for Monday).
'building' indicates an anagram.
'soon' with letters rearranged gives 'oons'.
'mons'+'oons'='MONSOONS'
