'rollmop' can be an answer for 'dish' (I have seen 'savoury dish' mean 'rollmop' so perhaps 'dish' could also mean 'rollmop'). I am not sure about the 'fish' bit.

'with bread soak up' is the wordplay.
'with' is a charade indicator (letters next to each other).
'bread' becomes 'roll' (roll is a kind of bread).
'soak up' becomes 'mop' (mopping is a kind of soaking up).
'roll'+'mop' is 'ROLLMOP'.
