I believe the answer is:

ginger nut

I'm a little stuck... Click here to teach me more about this clue!

'biscuit' is the definition.
(type of biscuit)

'ingredient as mixed by spooner that's seen on collar' is the wordplay.
I cannot really understand how this works, but
'ingredient' could be 'ginger' (ginger is a kind of ingredient) and 'ginger' is found within the answer.
The remaining letters 'nut' is a valid word which might be clued in a way I don't see.
This explanation may well be incorrect...

Can you help me to learn more?

(Other definitions for ginger nut that I've seen before include "redhead?" , "Variety of biscuit" , "Spicy biscuit" , "Type of biscuit" , "Kind of biscuit" .)

I've seen this clue in The Times.
