Crossword Genius

Stuff one on ancient beef (8)

Ross

I believe the answer is:

pastrami

I'm a little stuck... Click here to teach me more about this clue!

'beef' is the definition.
(I know that pastrami is a type of beef)

'stuff one on ancient' is the wordplay.
'stuff one' becomes 'rami' (I can't justify this - if you can you should believe this answer much more).
'on' means one lot of letters go next to another.
'ancient' becomes 'past' (similar in meaning).
'rami' put after 'past' is 'PASTRAMI'.

Can you help me to learn more?

(Other definitions for pastrami that I've seen before include "Meat dish" , "A tramp is (anag) - meat" , "Sliced cured beef" , "Seasoned smoked beef, served in thin slices" , "beef dish" .)

I've seen this clue in The Telegraph.
